Five steps from "what did this cost me?" to a price that pays you.

  1. Ingredients for the batch: list each one with the amount used and what you paid. Batch total: $____
  2. Packaging per item: boxes, bags, labels, napkins. $____ each
  3. Cost per item: batch total ÷ items made + packaging = $____
  4. Your time: hours × your hourly rate ÷ items made = $____ each
  5. Price: (cost per item + time per item) ÷ (1 − target margin) = $____

Example: our cookies cost 39¢ each in ingredients. Add packaging and your time before you set the price. That's how you make sure you're getting paid for the baking.

Price check

  • Does your price cover a bad day, like a dropped tray or a slow market?
  • Have you re-costed since butter, eggs or flour went up?
  • Food trucks: does the price cover your commissary, fuel and event fees?
